Cauliflower Taco's with Sweet & Sour Slaw & Fresh Salsa 🌮

You may not believe this, but a year ago, cauliflower had become an enemy. A year before becoming vegan, we overdosed on it during our ridiculous Keto days (eye-roll).... Now it's back in our hearts (and bellies) and is a definite favourite again. Here's to Cauliflower!!! 🥳


So after we had those absolutely scrumtastic taco's from Shakespeares & Co, we HAD to recreate them. Recreate we did, and holy caulimole, they are AWESOME😍. This is a quick-fire recipe, so a few cheats which can easily be subbed for whatever you like! Takes about 25 mins in total and serves 4 people (or 2 little piggies...🐷🐷)

So here's what you'll need (This will serve 4)


For the cauliflower:

3 cups of cauliflower florets

1 pack of chilli/burrito/fajita mix (your choice)

2 tsps of olive oil


For the slaw:

1 cup of shredded red cabbage

1 cup of shredded white cabbage

1 tbsp of apple cider vinegar

1/2 tsp sugar

1/4 tsp salt


For the salsa🍅:

2 fresh tomatoes finely diced

1 small red onion, finely diced

1 small lime


For the garlic aioli🧄:

4 tbsps of vegan mayo or sour cream

3 cloves garlic (minced)

1 lemon

(Optional - you can add a couple of slices of fresh avocado and blend well to elevate this)


8 tortilla's (we used two types)

Sliced Avacado

Shredded vegan cheese to top (we used Daiya Jalapeno)

Lime to squeeze over

Salt

Pepper


Method:

1. Preheat oven to 200 degrees Celsius (400 degrees Fahrenheit).

2. Place the cauliflower florets in a bowl, toss with olive oil and coat with your chosen packet mix. Place on a baking tray with parchment paper and bake in the centre of the oven for 20 minutes, tossing midway through.

3. Meanwhile, add your shredded cabbage together, apple cider vinegar, sugar and salt together - toss well. Slaw done✔️.

4. Combine the tomatoes, onion, lime juice (from 1 lime), salt and pepper for taste. Salsa done✔️.

5. Mix your mayonnaise/sour cream with the juice of half a medium-sized lemon, add the minced garlic cloves and a dash of S&P, mix until it becomes a smooth creamy dressing. Aioli done✔️.

6. Remove the cauliflower and place in a bowl ready to serve ✔️. Pop your tortilla's over the grate in the oven and bake for 5-10 mins so they look like this:

Arrange as an assemble yourself style feast, layer the slaw, then cauli, then salsa, avocado and cheese before drizzling the garlic dressing over the top. You could also swap the cauliflower for the cauliflower buffalo wings for buffalo tacos! Recipe here. Delicious! 🤗💚
