Creamy Crunchy Vegan Coleslaw 🤗

I've really been missing coleslaw. Especially as the go-to side dish for all things BBQ and summer eating related. Sun shining? You need slaw. Burger grilling? You need slaw. Dogs? Slaw. Pulled non-pork butties? Slaw. Jacket Spuds? ALL THE SLAW. 🤤

I didn't even really think about trying to veganize coleslaw until I came across a recipe on www.noracooks.com . It turned out creamy, crunchy and totally satisfying. I substituted the sugar for Stevia (because at this rate, I'll be rolling my arse back into work 🌝) and it tasted fantastic... Took no time at all either, which is great, as I'm sometimes both greedy & lazy 😬. Side note - we didn't have the celery seeds, so they were omitted from our slaw.

So here's what you'll need:

  • 5 cups coleslaw mix (Lazy vego goes for store-bought😜👏).

  • 1/2 cup Vegan Mayo (we used Hellmann's)

  • 2 tbsp of Stevia or granulated sugar

  • 2 tbsp Apple Cider Vinegar

  • 1/4 tsp salt

  • 1/8 tsp celery seed (we didn't use this, but Nora's recipe has it in there).


  • Add all ingredients except the coleslaw mix and mix together until fully combined.

  • Add in the coleslaw mix and stir well. Cover, and refrigerate for at least 2 hours before serving, if possible.
