Creamy Spinach & Cheese Dip🍃🧀
I've been craving a cheesy creamy dip to have with tortilla chips, so had a go at veganizing a spinach dip recipe and this did not disappoint! It was a perfect dip addition to the usual kings of all dips (hummus, guacamole, and salsa), and totally hit the cheese craving we were having🤤.
Now there does seem to be a fair few ingredients, but the actual execution of this dish is super simple. We're talking 15 mins start to finish. Spinach is also an incredible superfood and great to get into the diet. We served this warm (and I truly believe this is the way to go), but you could easily chill it if you fancied.
I could hands down eat the whole batch of it, and also whacked it on some garlic bread knots the other half made (for that recipe, see here).
Here’s what you’ll need:
4 garlic cloves (minced)
1 red onion (diced)
1 splash of Olive Oil
½ bag of fresh spinach
½ tub or 125g of vegan cream cheese – (We used Garlic and Herb Sheese and it was perfect!)
2 tbsp of Nutritional Yeast
½ tsp onion powder
½ tsp garlic powder
½ tsp paprika
Salt & pepper to taste
Sautee onion and garlic in a splash of olive oil until onions are translucent.
Add spinach leaves and allow to wilt down for 3-5 minutes.
Add vegan cream cheese, nutritional yeast, onion & garlic powder and paprika and stir until the cheese has melted.
Taste & add salt and pepper as needed.
Serve warm with crunchy tortilla chips.
Before you make this recipe, you should know a few things. We LOVE garlic, and therefore, this will have a strong flavour to it. Totally delicious if you’re into strong flavours and garlic, but if not, perhaps cut out the garlic powder, and use plain cream cheese instead of garlic & herb.
