Gorgeous Veg Packed Ratatouille 🥔🥒🍆🍅

In no way was the creation of this dish related to the film.

NOT. Of course, I watched the film, and seeing the look on Anton Ego's face when he bites into Remy's Ratatouille was enough to get me hot-footing to the kitchen.

Layered veggie goodness soaked in a rich garlicky tomato sauce. It's just so good, and such a low-fat meal. We are HUGE fans of this dish. I didn't follow a recipe, I kind of had it in my head of what I wanted this to taste like. It is a Mediterranean dish, but for this, we didn't use bechamel sauce in it, just tomato, spicy, garlic goodness. What can I say, I LOVE garlic and tomatoes. 😍🍅 I topped it with panko bread crumbs to give it a lovely crunchy top and served it with some spicy fried rice.

So here's what you'll need:

2 cups of passata

4 cloves of minced garlic

1 whole large white onion

1 diced green chilli pepper

1 red bell pepper

1 large potato

1 medium eggplant

1 zucchini

1 tsp dried oregano

1tsp paprika

1 tsp dried basil

Spray of olive oil (I used chilli oil)

Panko bread crumbs (for sprinkling on top)

Salt & pepper for taste


  1. Preheat the oven to 380 Farenheight, 190 Celsius.

  2. Sautee your chopped onion, garlic, green chilli and red pepper in the chilli oil until they soften. Add the tomato passata, oregano, basil, paprika and a generous helping of salt and pepper. Let your sauce simmer on the side.

  3. In the meantime, you want to slice your potato, zucchini and eggplant finely, into rounds slices. The potato will need to be blanched in boiling water for 3-4 minutes.

  4. Put a cup of your sauce on the bottom of the baking dish, and layer the potato, zucchini and eggplant one after another.

5. Layer the rest of the sauce on top, and use a teaspoon to help the sauce get between each slice for extra deliciousness.

6. Top it with a healthy sprinkle of breadcrumbs, and bake for 50-55 minutes.

And it's really as simple as that. Choc full of veggie goodness and absolutely exploding with flavour. We served this alongside a side of spicy pepper rice. Enjoy fellow Vego's! 😍🤤
