Introducing our Vegan of the week.....Roger!πŸŒŽπŸ’šπŸŒ±

What made you become Vegan/Plant-Based?

Animals were the main reason, I watched many documentaries about how people treat them just to please our palates and meet the demand for meat. Eating meat but love the animals does not have sense for me. I want to help this world as much as possible and live in a sustainable way keeping my body healthy which is very important too.

What benefits do you see/feel since becoming Vegan? (this could be health, or ethical).

The first benefit I felt was totally on my body, I have a lot more energy now, I sleep better than before and I feel my body so clean. Nowadays I feel in peace with myself saving a lot of animals lives, I am more creative when I’m cooking and I love that.

Are there plenty of Vegan food options where you live?

Not a lot. There are not too many vegan/vegetarian restaurants, which means that is difficult go out to eat, but if we speak about grocery stores and supermarkets, there are a variety of seasonal fruits and vegetables.


Are any of your friends or family Vegan?

Not that I know, I am the first person who gave the first step, however, my girlfriend is accompanying in this path.

Is there anything you don’t like about being Vegan?

The only thing I don’t like is to live in a place where the vegan options are limited.

What is your favourite Vegan meal/food?

Chickpeas Stew is my favorite definitely.

Is there any Vegan food you dislike?

Yes. The jackfruit, but I’m still finding the best way to cook it, I’m so open to try it an eat everything.

Have you got any top tips for anyone who may be starting a plant-based/vegan lifestyle?

Yes, just don’t think about it and do it, listen to your body, educate yourself. We are different and our drive to become vegans might not be the same so find your drive ...animals, global warming, health, you name it. By the end of the day the results will be the same...a happy and beautiful balance with our planet and ourselves.

Have you got a favourite Vegan recipe? If so, please share it with us!

Oh yes. Is a dessert which we are created just basing us in how the ingredients can work if you’re creative. We called it β€œVegan Silken Tofu", this is:


Ingredients:

Crust: 2 cups of crushed oreo cookies without the cream.

1/2 cup of oats

4 tbs of vegan Butter

Filling:

1 pack ok silken tofu (drained).

2 tbs of Cocoa powder unsweetened

Half of the oreo cookies cream

1 cup of dark melted chocolate

3 tbs oats or almond milk

Directions:

For the crust: Mix the crunched cookies with the butter and dump the mixture into the pie plate and press into the shape of the pan, bake for 10 or 15 minutes at 200C.

For the filling:

Melt the chocolate (either on the stove or in the microwave), until smooth, set aside.

Put all the ingredients into the blender or food processor and blend, starting on low speed and increasing to high, until the mixture is completely smooth, check the flavour and if you want to add the rest of the oreo cookies filling.

Pour the mixture into prepared crust and store in the fridge for about 4 hours or overnight for better texture.


Your final thoughts?

Well, I would like to talk about my transition to veganism. This travel for us has been awesome, we learn every day from different people how to prepare and create new recipes, we love to be creative when we’re cooking and all the time we are seeking for new recipes, after two months I decided to create the website on Instagram to show the people that you can be vegan without any issues and enjoy this new lifestyle every day and it can be cheaper and fun. We have two lovely cats and we live in front of the beach which is an awesome feeling and no matter where you are connecting yourself with the world and it will show you the way.
