Spicy Garlic Pepper Pasta with Pillowy Garlic Bread Buns 🍝😍

Right guys. I'm a little embarrassed about this one. It's so ridiculously easy that I was worried I'd get a few eye-rolls by posting this as a recipe. But sod it! It's so delicious, at the very least it'll inspire a few people to have a wee pasta dinner. Erm also.....start to finish - 15 minutes. 🤩

The garlic bread was a bit of an accident, but HELL YEAH it was a winning accident! We had zero bread in the house, except for 3 leftover bread rolls (Baker Street brand - so pillowy 🤤). These ended up being a most delicious variation on Garlic Bread!


Here's what you'll need:

For the Sauce – adjust to your taste!

· 2 small red chillies (de-seed if you’re not a fan of the heat)

· 1 large red capsicum or 2 medium ones

· 1 large white onion

· 4-5 cloves of crushed garlic (I can’t get enough garlic!)

.1 tsp of extra virgin olive oil

· 1 jar of passata

· 1 tbsp Dried oregano

· Crushed black pepper & sea salt (to taste)

.Pasta of your choice, we chose fusilli as really holds the sauce well!

For the Garlic Bread

· 3-4 tbsp of extra virgin olive oil

· 4 cloves crushed garlic

· 1 tsp of dried oregano

· Crushed black pepper & sea salt (to taste)


Method:

1. lightly fry the onions, garlic, capsicums and chilli in the olive oil until softened. Lazy vego tip - I threw all of these veggies in the blender and just pulsed it until it resembled the size I wanted.

2. Add the Passata, oregano, salt and pepper

3. Add the cooked pasta into the sauce and give it a mix. omg. so👏friggin👏easy👏.

For the Garlic bread just mix the oil, garlic, oregano, S&P, spread it on the bread and grill for 4-5 minutes, or until you see the bread begin to toast. You can literally use ANY bread.

And boom - literally dinner in 15. FIFTEEN MINUTES!!! 🤩👏
