Super Simple 3 Bean Chilli 🌶🍛

This comforting and filling recipe is perfect for a group, or a great dish for meal prep or freezing. This recipe serves 5 (maybe even 6)🤗.

Super simple, the ingredients are mostly what you already have in your pantry. Tinned beans?✔️ Tinned veg?✔️ Broth? ✔️ You can experiment with this recipe easily, swap the beans out with your favourites, add extra veg to bulk it up and make more portions, leave the chilli seeds in to pack a heated punch! Leave out what you're not so keen on, add what you love!🌶🌽🍅


So here's what you'll need:

  • 1.5 large onion, diced

  • 5 cloves garlic, minced

  • 2 red chillies, seeds removed and diced

  • 1 tbsp cumin powder

  • 1 tbsp paprika

  • ½ tablespoon cayenne

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) kidney beans, drained and rinsed

  • 1 can (15 oz) white beans, drained and rinsed

  • 1 can (28oz) diced tomatoes, with juices

  • ½ can of sweetcorn, drained

  • 1 tbsp cocoa powder

  • 1 1/2 cups vegetable broth (add more if needed)

  • Salt & pepper to taste

Method:


1. Sauté onion until tender, add the garlic, chilli, and herbs/spices, cook for another 5 minutes.


2. Add the rest of the ingredients, a simmer for 30 minutes on low heat.

Serve with brown rice, warm bread, tortillas or nachos!
