Sweet & Sour Chick'n & Brown Rice๐Ÿฅข๐Ÿฅก

Firstly. This was the quickest easiest dish ever. 18 mins start to finish - (so literally the brown rice cook time).๐Ÿ˜ฒ๐Ÿ‘๐Ÿ‘๐Ÿ‘


Following our Chick'n Korma Success, we were out to recreate another homely favourite from our country, the UK. Sweet & Sour Chick'n!! The UK is such a beautifully diverse place, the British Asian community have made UK Indian & Chinese food a glorious cuisine of its own! The nations favourite food is a curry๐Ÿ˜๐Ÿ›!


We had the Mandarin Crispy Chick'n pieces by Gardien...(they look exactly like little nuggets) and tried this sweet and sour cooking sauce by Kan Tong. This was the easier recipe ever to jazz up, we just added a few things here and there, it worked like a DREAM. ๐Ÿ’š๐Ÿ˜๐Ÿ’š


Here's what we used:


  • 1 Jar of Kan Tong Sweet & Sour

  • 1 pack of Gardien Crispy Chic'n (but you could use any vegan Chick'n nuggets for sure)

  • 1 whole white onion, diced.

  • 1 orange capsicum, diced

  • 1 large green jalapeno

  • 1 red chilli (de-seed if you don't want too much heat)

  • 1 cup of jumbo cashews

  • 1 tsp of paprika

  • 1 tsp of cayenne

  • 1 cup of brown rice (uncooked)

  • 2 cups of veggie stock

  • Salt & Pepper to taste

Method:


  1. After rinsing the rinse, we cooked it with the veggie stock to add extra flavour.

  2. Whilst the rice was cooking, we sauteed the onion, capsicum, jalapeno & chilli on medium-low heat. When the onions softened, we added in the cashews and turned up the heat to give a bit of colour to all the ingredients.

  3. We added the paprika, cayenne, S&P, then threw in the cooking sauce and let that simmer.

  4. It was as easy as that. Served on brown basmati rice.

This recipe tasted just like home Sweet & Sour, and the chick'n pieces were incredible. 100% a non-vegan wouldn't have a clue this was vegan if you didn't tell them. The husbands face when he tasted it was absolutely priceless ๐Ÿคค, especially these days when we just don't know when we will be back home in the UK again.
