The Bosh Big Green Bowl 🥙

We have our fair share of Vegan recipe books on our bookshelf, but the Bosh! book was hands down, the BEST investment we've made in any recipe book🤗. We've made 5 recipes so far, and each one has blown our mind🤯. (Keep tuned in to see how it went!)


The Bosh Big Green Bowl is not only ridiculously delicious, but makes for a PERFECT weekly meal prep dish. Packed with allllllll the good stuff (you can feel your health improving with every bite...😅), this was an absolute winner for our weekly lunches.

As with most bowls, this is an assembly line of goodness. 🤤


So here's what you'll need

This makes 2 lunches, so double/triple if you want more:


1 cup of cooked brown rice

1 cup of cooked green beans

1 cup of cooked broccoli

12 cherry tomatoes

1 finely chopped chilli

6 tablespoons of hummus (we made our own, but store-bought is fine)

15 baby spinach leaves

1 cup of cashew nuts

1 cup of mixed chickpeas, kidney beans and sweetcorn

Salt & pepper for taste

For the dressing: (put this is a separate bottle for meal prep to prevent sogging)

1 minced garlic clove

1 minced piece of fresh ginger (2cm piece)

2 tbsp of olive oil

2 teaspoons of sesame oil


Method:

Sauce: pop all the ingredients together, give it a stir and pop it in a bottle.

Bowl: Assemble. Half the ingredients in each bowl. LOVE THE EASE!!!🙌😍

Now you'll find a little bit about you as a person. Are you a 'mix the whole thing wildly together to form a smoosh of everything' or a 'keep it neat and try and get a bite of everything on a spoon'.... I am the first. 😬
