Velvety Tofu & Spinach Scramble 🤗💚

You may have seen our previous post Creamy Spinach and Cheese Dip (here), which left us with half a bag of spinach. Pair that with some silken soft tofu, a few veg, some herbs and spices and boom. I had made (in my not so humble opinion), the worlds best tofu scramble. 😍

I was never a huge egg lover BV (before Vegan), but I did love scrambled eggs! Tofu and us have had a rocky road😐. It’s only been in the last few months that we’ve really started to understand each other. Tofu is a tricky little ingredient, but with the right treatment and a good press (see here), we have fallen in love with it! More recipes surrounding this delicious food staple coming soon….🤓

I added a teaspoon of Deliciou bacon flavouring in here to give it a wonderful smoky bacon flavour and it just elevates it to another level. We love this stuff and have started adding it into everything cheesy or creamy! You can find the link to their website here.

So without further ado..

Here’s what you’ll need:

  • One box soft silken tofu

  • Half a bag of fresh spinach

  • 1 chopped onion

  • 2 large garlic cloves (mashed)

  • 1 chopped green capsicum

  • 3 tbsp of sweetcorn

  • ½ teaspoon onion powder

  • ½ teaspoon garlic powder

  • ½ teaspoon turmeric

  • ½ teaspoon of Himalayan black salt (for the eggy flavour)

  • 1 teaspoon of Deliciou bacon flavouring (this is optional)

  • Salt and Pepper for taste


  1. Press the tofu for half an hour, just to take away some of water.

  2. Fry off the garlic and onion and capsicum in a splash of water (switch this to oil if your prefer).

  3. Add the tofu, spinach, sweetcorn and all the spices in together and give it a good mix. Fry this on a medium heat until the spinach has wilted down, and it looks like creamy scrambled egg. Salt and pepper it to your taste.

We served this with Birdseye vegan sausages, toast and grilled tomato slices and it was perfect. Creamy decadent and packed full of flavour. Enjoy!🤗💚
