Voilร , Smokey Tex-Mex Pasta Salad ๐Ÿค 

I was getting pretty bored of salads (lol, as if I eat too much salad....), needed some pasta in my life, and was craving that Tex-Mex flavour. This ๐Ÿ‘ salad ๐Ÿ‘ is ๐Ÿ‘ boss ๐Ÿ‘. Chickpeas and black beans just provide such a great texture in salads, and totally take the place of what would have been tuna or chicken. FYI - Healthio's, just replace the pasta with your fav leaves and salad base to cut those carbs down.


This absolute beauty was a mish-mash of a couple of recipes I found online. It was super simple and quick to make and makes a big batch (4 servings for us, but probs 6 servings for โ€œnormalโ€ peopleโ€ฆ ๐Ÿ˜…), so here goesโ€ฆ


Ingredients

2 cups pasta - you choose which, we loved fusilli.

Can of chickpeas โ€“ drained

Can of black beans โ€“ drained

Can of sweetcorn - drained

1tbsp smoked paprika

1tbsp ground cumin

ยฝ teaspoon of cayenne pepper or chilli flakes

1 tsp of garlic salt

1 tsp of onion powder

Salt and pepper to taste

1 tbsp of olive oil

1 red onion โ€“ finely chopped

Red cherry tomatoes, quartered.


For the dressing:

1 cup Vegan mayonnaise

2 tbsp of oat milk

ยผ teaspoon of garlic salt

ยผ teaspoon of onion powder

Salt and pepper


Instructions:

Cook pasta as desired, (this can be done earlier if you want cold pasta).


Preheat the oven to 200ยฐC


Drain & rinse the chickpeas, add them to a large roasting tray. Mix with paprika, cumin, cayenne, onion powder, garlic salt, oil and pinches of salt and pepper. Give them a good mix and roast for 15 minutes.


Drain & rinse the black beans and drain the corn, add to the chickpeas. Use a spoon to give everything another good mix and roast for 10 minutes.


Dice the onion finely, quarter the tomatoes and add to your pasta in a mixing bowl.

Combine all ingredients for the dressing (if too runny add more mayo, if not runny enough add more oat milk).


Mix it all up and boom! You are ready to trough and roll. Nom Nom Nom.๐Ÿฅ™๐Ÿ™Œ
